Zucchini Pizza Bites

These pizzas are easy to make and very light on calories compared to versions with any type of crust. And perfect little 2 bite appetizers any type of gathering.
Ingredients
- 1 Med Zucchini , cut into 1/2” thick rounds
- 8 Pieces Pepperoni , uncured and organic
- 2 Oz Parmigiano-Reggiano Cheese , shaved
- 8 Pieces SMART Oven Dried Tomato Paste
Directions
- Preheat oven to 425F. Parchment line a baking sheet.
- Using a grill or sauté pan over medium heat, grill the zucchini until lightly crispy on the outside and soft on the inside.
- Remove from heat and set aside.
- Place Zucchini rounds on baking sheet.
- Then stack each Pizza Bite in this order (from bottom up): Zucchini, Cheese Shave, Tomato, Cheese Shave, and finished with Pepperoni.
- Bake on top rack for 3 minutes or until cheese is melted.
- Serve immediately.
