Grilled lamb chops

- 4 Lamb Chops (2 lamb chops or 6 oz per person)
- 1 Tbsp EVOO
- 2 Tbsp Lemon Juice (appx 1⁄2 lemon)
- 1 Tsp Oregano
- Sea Salt & Pepper
Directions
- Combine Oil, Lemon, and Spices
- Rub Lamb Chops and set aside for 30 minutes (or longer, up to 1 day).
- Heat grill (outdoor or indoor).
- When hot, grill lamb chops on both sides. If thick, finish in oven to desired temperature.
Pomegranate glaze

- 1⁄4 C Pomegranate Juice
Directions
- Heat saucepan over medium heat.
- Add juice.
- Bring to a boil, reduce to a simmer, and cook until juice is reduced by at least 50% and syrupy.
Roasted potatoes

- 1⁄2 C Potatoes thin skinned, halved and sliced
- 1 Tbsp EVOO
- 2 Tbsp Lemon Juice (appx 1⁄2 lemon)
- 1 Tsp Oregano

Directions
- Toss with oil, lemon, and spices.
- Heat cast iron pan over medium heat.
- When hot, add potatoes and cook on both sides until crispy about how 20 minutes.
Chocolate pudding

- 3/4 C Almond Milk unsweetened
- 1 Tbsp Raw Sugar
- 1 Tbsp Cocoa Powder
- 1 Pinch Espresso Powder
- 1 Pinch Sea Salt
- 1 Tbsp Arrowroot
- 1⁄4 C Almond Milk
- 1 Tsp Vanilla Extract
Directions
- Combine milk, sugar, cocoa, espresso, and salt in saucepan over medium heat. Cook until sugar is melted.
- Combine arrowroot with almond milk. Stir well and add to saucepan. Cook until thickened. Remove from heat and add Vanilla. Cool and serve with fruit, nuts, or your preferred toppings.
