A light pomegranate glaze is also flavorful without all the extra calories of a traditional gravy. By swapping from mashed potatoes to roasted, you’re saving more than 100 calories. And don’t let our decadent chocolate pudding fool you – it’s only 40 calories per serving!

Grilled lamb chops

Serving size 6 oz 442 calories Protein: 35g Carbs: 1g Fat: 23g

Ingredients

  • 4 Lamb Chops (2 lamb chops or 6 oz per person)
  • 1 Tbsp EVOO
  • 2 Tbsp Lemon Juice (appx 1⁄2 lemon)
  • 1 Tsp Oregano
  • Sea Salt & Pepper

Directions

  1. Combine Oil, Lemon, and Spices
  2. Rub Lamb Chops and set aside for 30 minutes (or longer, up to 1 day).
  3. Heat grill (outdoor or indoor).
  4. When hot, grill lamb chops on both sides. If thick, finish in oven to desired temperature.

Pomegranate glaze

Serving size 1 tbsp 17 calories Protein: 0g Carbs: 8g Fat: 0g

Ingredients

  • 1⁄4 C Pomegranate Juice

Directions

  1. Heat saucepan over medium heat.
  2. Add juice.
  3. Bring to a boil, reduce to a simmer, and cook until juice is reduced by at least 50% and syrupy.

Roasted potatoes

Ingredients

  • 1⁄2 C Potatoes thin skinned, halved and sliced
  • 1 Tbsp EVOO
  • 2 Tbsp Lemon Juice (appx 1⁄2 lemon)
  • 1 Tsp Oregano
  • Sea Salt & Pepper

Directions

  1. Toss with oil, lemon, and spices.
  2. Heat cast iron pan over medium heat.
  3. When hot, add potatoes and cook on both sides until crispy about how 20 minutes.

Chocolate pudding

Serving size 1⁄2 c 34 calories Protein: 6g Carbs: 18g Fat: 4g

Ingredients

  • 3/4 C Almond Milk unsweetened
  • 1 Tbsp Raw Sugar
  • 1 Tbsp Cocoa Powder
  • 1 Pinch Espresso Powder
  • 1 Pinch Sea Salt
  • 1 Tbsp Arrowroot
  • 1⁄4 C Almond Milk
  • 1 Tsp Vanilla Extract

Directions

  1. Combine milk, sugar, cocoa, espresso, and salt in saucepan over medium heat. Cook until sugar is melted.
  2. Combine arrowroot with almond milk. Stir well and add to saucepan. Cook until thickened. Remove from heat and add Vanilla. Cool and serve with fruit, nuts, or your preferred toppings.
  3. Garnish with Black Lava Sea Salt
