Tzimmes With Chicken

Ingredients
- 1 Bag Cubed Butternut Squash , frozen/defrosted
- ⅓ C Pitted Prunes
- 3 Clvoes Garlic , minced
- 2 Lg Shallots , sliced
- 1 Tsp Cinnamon
- 1 Tsp Oregano
- 1 Tsp Thyme
- Sea Salt & Pepper
- 4-6 Chicken Thighs , Bone in, Skinless, Fat trimmed
- 1 C Chicken Bone Broth
- 1 Tsp Orange Zest , grated
- ¼ C Orange Juice
Directions
- PreHeat Oven to 350F.
- Place Squash, Prunes, Garlic, Shallots, and Spices in baking dish and mix well and spread out.
- Season Chicken with Salt and Pepper and place on top of vegetables.
- Combine broth, juice, and zest and pour over chicken and vegetables.
- Cover dish with lid or foil and bake for 40 minutes.
- Uncover and continue baking until chicken is cooked through and vegetables are fork tender, approximately 1 hour.
- Baste frequently.
