Ingredients

  • 1 Bag Cubed Butternut Squash , frozen/defrosted
  • ⅓ C Pitted Prunes
  • 3 Clvoes Garlic , minced
  • 2 Lg Shallots , sliced
  • 1 Tsp Cinnamon
  • 1 Tsp Oregano
  • 1 Tsp Thyme
  • Sea Salt & Pepper
  • 4-6 Chicken Thighs , Bone in, Skinless, Fat trimmed
  • 1 C Chicken Bone Broth
  • 1 Tsp Orange Zest , grated
  • ¼ C Orange Juice

Directions

  1. PreHeat Oven to 350F.
  2. Place Squash, Prunes, Garlic, Shallots, and Spices in baking dish and mix well and spread out.
  3. Season Chicken with Salt and Pepper and place on top of vegetables.
  4. Combine broth, juice, and zest and pour over chicken and vegetables.
  5. Cover dish with lid or foil and bake for 40 minutes. 
  6. Uncover and continue baking until chicken is cooked through and vegetables are fork tender, approximately 1 hour.
  7. Baste frequently.
  8. Enjoy!
