Turkey and Black Bean Chili

Ingredients

  • 1 Tbsp Olive Oil
  • 1 Medium Onion , diced
  • diced Poblano , diced
  • 2-4 Cloves Garlic , minced
  • 1 Tbsp Ancho Chili Powder
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp Cumin
  • 1 lb Ground Turkey
  • 1 Lg Can Fire Roasted Tomatoes
  • 2 Cans Black Beans , rinsed
  • 2 Cups Chicken Bone Broth (more if you like it soupy)

Directions

  1. Heat oil in Soup Pot over medium. When hot, add onion and poblanos – cook until soft. Add Garlic and Spices – cook until fragrant. Add Meat – cook until browned through.
  2. Add Tomatoes (plus juice from the can), Beans and Broth – bring to a boil, drop to a simmer, cook for 20ish minutes so flavors can blend.
