Thankful Soup

This amazing soup is a perfect way to use up your Thanksgiving leftovers. Literally, anyting except cranberry sauce can be added. And if you like a thicker soup, leftover gravy makes a good starting point. Just add enough broth to get it to the right consistency.

Ingredients

  • Olive OIl 1 Med Onion, diced Olive Oil
  • 1 Med Onion , diced
  • 1-2 C Carrot , diced
  • 2 Tbsp Favorite Spice Blend
  • 1-2 C Green Beans
  • 2 C Turkey , shredded or diced
  • 6 C Chicken Bone Broth , or Turkey Stock
  • 1" Block Parm Cheese Rind

Directions

  1. Heat Oil in Soup Pot over Medium. When hot, add onions, cook until softened. Add carrots and celery, cook until softened. Add spices, cook until fragrant. Add Green Beans and Turkey, coat well with warm spices. Add Broth and Rind. Bring to a boil. Drop temp to low and simmer for 15-20 min.
  2. For serving add Stuffing to the bottom of the bowl and pour hot soup over the top.
