Thai Peanut Street Tacos

These Tacos can be made with nearly any protein you have available including lentils or chickpeas for a vegetarian option. And we’ve wrapped these in one of our favorite Smart Swaps – Jicama Tortillas – because the sauce is so flavorful, you don’t miss the tortilla. NOTE: if you don’t have jicama tortillas available at your grocery store, a lettuce wrap works equally well. If you have a mandolin in your kitchen, you can slice your own “tortillas” – just purchase fresh Jicama or Daikon Radish for appetizer size. And if you choose a traditional flour or corn tortilla, make sure to account for the added calories (appx +100 for each tortilla).

Ingredients

  • 1 Tbsp Avocado Oil
  • 1-2 Shallots diced
  • 1 Lb Shrimp shelled and deveined
  • ½ C SMART Thai Peanut Sauce
  • 8 Jicama Tortillas
  • 1 Medium Avocado , sliced
  • 2 Radishes , sliced

Directions

  1. Heat sauté pan over medium, add oil.
  2. When hot, add shallot and cook until soft.
  3. Add shrimp and cook until opaque (cooked through).
  4. Add sauce, toss with shrimp and cook briefly until sauce is warm, approximately 1 minute.
  5. To Assemble: Place Shrimp in Jicama Tortillas
  6. Top with Avocado and Radish.
