Thai Peanut Dressing

Meal: 70 calories Protein: 1 g Carbs: 6 g Fat: 3 g

We have saved some calories in this dressing mostly by replacing all of the sugar with 1 tbsp of honey and using Almond Butter instead of Peanut Butter.

But where the real savings can be found is in the Noodle dish this is served on. You can use this on any salad you prefer, but we have created an alternative to a Thai Peanut Noodle Salad (see below) for only 100 Calories!

Thai peanut dressing

Serving size 2 tbsp 70 calories Protein: 1 g Carbs: 6 g Fat: 3 g

Ingredients

  • (or more Rice Vinegar)

Directions

  1. Combine all ingredients in a blender or bowl and mix well. Stores well for up to one month.

SERVE ON YOUR FAVORITE SALAD OR WITH THE FOLLOWING:

  • Shirataki Noodles (in place of Udon or Spaghetti): 20 calories for 8oz
  • Shredded Lettuce, Carrots, Peppers, Cucumbers, Scallions: 30 calories for 11⁄2 C
  • Peanuts (diced) or Sesame Seeds: 50 calories for 1 Tbsp
  • Garnish with Limes & Cilantro
