Ingredients

  • Almonds , sliced
  • Hazelnut Oil (or any other nut oil from your pantry)
  • Frozen Green Beans , thawed on counter or microwave
  • Mushrooms , thawed on counter or microwave
  • Salt & Pepper
  • Arugula
  • Cheese , Feta (or any other cheese from your fridge) 

Directions

  1. In cast iron pan over medium heat, dry toast almonds. When fragrant remove from pan.
  2. Heat oil in same pan. When hot, add green beans and mushrooms. Cook until hot and lightly blistered. Season with Salt & Pepper.
  3. Add Arugula to salad bowl. Add hot Vegetables and toss together. Top with Nuts and Cheese.
