Steak & Bleu Cheese Tacos

These tacos do not have the traditional weight of standard tacos - no sour cream, no guacamole, and no cheese. This saves several hundred calories per taco. But no worries, you'll never miss the extra calories because we've loaded this taco with a simple steak cooked to perfection, caramelized mushrooms, and an extremely vibrant lemon bleu cheese vinaigrette.
Ingredients
- 8 Almond Flour Tortilla
- 1/2 lb Flank Steak
- 1 Tbsp Olive Oil
- 2 Tbsp Garlic , minced
- 1/4 C Shallots , minced
- 1 Lb Mushrooms , minced
- 1 C Arugula
- 2 Tbsp
Directions
- Season steak with Salt & Pepper. Heat Grill Pan over Medium.
- Add Steak. Cook 8 minutes. Flip and cook several minutes on the other. Set Aside.
- Heat Saute Pan over Medium. When hot, add a tortilla. Cook 2 minutes each side. Set Aside.
- Slice steak thinly on the bias. Set aside.
- Once all tortillas are cooked, add oil to pan. When hot, cook onions until soft.
- Add garlic, Salt & Pepper. Cook until fragrant.
- Add Mushrooms. Cook until soft and caramelized. Set Aside.
- In a bowl, toss arugula with dressing. Set Aside.
- To Assemble: Place tortilla on plate, add mushrooms, steak, and finally, arugula.
