Taco Meat can be dense calories when it’s all beef. In this version we have added tons of flavor and you’d never know we cut the beef by adding much lighter black beans. Your palate is going to be so happy with the Sofrito and spices – it will never be the wiser that you gave up almost 400 calories – 50 for the beef, 150 for the tortilla (more if you normally fry them), and 150 for all the toppings (sour cream, cheese, and guacamole).

Ingredients

  • 1 Tbsp Olive Oil
  • ½ c Sofrito
  • 1 Can Tomato Paste
  • 1 Tbsp Ancho Chili Powder
  • 1 Tbsp Cumin
  • 1 Tbsp Smoked Paprika
  • Sea Salt & Pepper
  • 1 Lb Ground Beef
  • 1 Can Low Sodium Black Bean
  • Lettuce Leaves , Green or Red Leafy Lettuce
  • Roasted Poblanos , sliced

Directions

  1. In Saute pan on Medium, heat olive oil. 
  2. When hot, add Sofrito, cook until soft.
  3. Add Paste, Cumin, Paprika, Salt & Pepper, cook until fragrant. Add Beef and cook through.
  4. Add Beans and warm through. Set Aside.
  5. To serve, place lettuce on plate and scoop a couple tablespoons of meat into each. Top with roasted poblanos.
