Thousand Island Dressing

Classically, Thousand Island dressing is served with Reuben Sandwiches. This can be quite rich and heavy, but the core flavor profile is strong - Corned Beef or Pastrami, Swiss Cheese, Sauerkraut (Cabbage) and Thousand Island Dressing. We’ve reduced the calories of the dressing by replacing all the dairy and eggs with cashews. And for the meals, we’ve reduced the calories by eliminating bread and reworking the proportions of corned beef, Swiss cheese, and dressing. We’ve upped the volume with gorgeous cabbage and we’ve amped up the flavors with more spices and fresh ingredients.

We’ve taken this and reworked it into a hearty Reuben bowl. We’re also sharing an alternative Reuben pizza and a Cheeseburger Salad which are terrific Smart Swapping recipes that use Thousand Island Dressing.

Serving size 12 (2 Tbsp ea) 40 cal Protein: 1g Carbs: 4g Fat: 3g

Ingredients

  • 3 Tbsp Mayo
  • 3 Tbsp Dijon Mustard
  • 6 Tbsp Ketchup low sugar
  • 2 Tbsp Lemon Juice
  • 1 Tsp Worcestershire
  • 1 Tsp Smoked Paprika
  • Sea Salt & Pepper

Directions

  1. Use a blender to mix all ingredients.

  • 1 Tbsp Shallots finely diced
  • 2 Tbsp Bread & Butter Pickles finely diced

Directions

  1. Pour into a bowl, then add Shallots and Pickles.
  2. If you prefer a smooth texture, add shallots and pickles to the blender.
  3. Will keep in fridge up to two weeks.
