Oven-Dried Tomato Vinaigrette

Ingredients
- 1 C SMART Oven Dried Tomato Paste Substitution: Oil packed Sundried Tomatoes
- 1 Tbsp Dijon Mustard
- ⅓ C Balsamic Vinegar
- ⅓ C Olive Oil
- 1 Tsp Harissa
- 2-4 Mint Leaves
- Sea Salt & Pepper
Directions
- Put tomatoes in the Blender and process until smooth.
- Add all other ingredients.
- Process until well combined. Add a bit of water if it’s too thick.
- Adjust seasoning and serve.
