And what to do with any leftover Oven Dried Tomatoes? Make the most wonderful tomato paste you have ever tasted! This paste is great start used as the base for salad dressing, to thicken tomato sauce, and to add to soup or chili.

Ingredients

  • SMART Oven Dried Tomato Paste
  • Balsamic Vinegar  --- just enough to blend

Directions

  1. Place tomatoes in blender or food processor.
  2. Pulse to puree; I leave my lightly chunky, not fully pureed.
  3. Add small amount of Balsamic Vinegar, if moisture is needed to purée.
  4. Store in fridge up to two weeks.
  5. Or in the freezer up to 6 months.
  6. Use an ice cube tray to create small blocks of tomato paste that can be easily thawed and used exactly when needed.
