Sliders

Sliders are perfectly 2.5. Why? Because even the most decadent slider is calorie-managed by virtue of the portion size. We have also found other calories in the way of alternative “buns”. But never fear, the flavor profiles on all three of these sliders more than make up for the calorie deficit. Highly flavored cheeses, concentrated sauces, and cooking in a well-seasoned cast-iron pan will create the most amazing crispy crust on the outside of your sliders. And all for less than 100 calories per serving!

Black and Bleu Stuffed Mushrooms

Serving size 2 sm or 1 lg 73 cal Protein: 6g Carbs: 2g Fat: 5g

Ingredients

  • 1 Lb Mushrooms (36-40 small mushrooms, 18-20 large ones)
  • 1 Tbsp Olive Oil
  • Sea Salt & Pepper
  • ½ Lb Ground Beef
  • ¼ C Dehydrated Onions
  • ¼ C Bleu Cheese
  • 2 Tbsp Chives
  • 1 Tbsp Worcestershire Sauce
  • ¼ C Almond Flour (more if the mixture is too wet)
  • Sea Salt & Pepper

Directions

  1. Preheat oven to 425F
  2. Remove stems from mushrooms and place cap side down in ceramic dish. Drizzle with Olive Oil, Salt & Pepper. Cook for 10 minutes. Set aside.
  3. Combine Beef, Onions, Cheese, Chives, Worcestershire Sauce, Flour, and Seasonings. Form into balls and stuff each of the mushroom caps. Cook for 10-15 minutes (longer if you are using the larger mushrooms. Remove from oven and enjoy!

Chicken Avocado Sliders

Serving size 1 Slider 86 cal Protein: 6g Carbs: 3g Fat: 6g

Ingredients

  • 1 Lb Ground Chicken
  • 1 C Avocado , diced or smashed
  • 3 Cloves Garlic , minced
  • ¼ C Dehydrated Onions
  • ½ C Almond Flour
  • 1 Large Eggs
  • 1 Tsp Tamari (Soy) Sauce
  • Sea Salt & Pepper
  • 1 Tbsp Olive Oil
  • Lettuce
  • Tomatoes , sliced
  • Cotija Cheese

Directions

  1. Combine Chicken, Avocado, Garlic, Onions, Flour, Egg, Tamari, and Seasonings. Form by hand or using a scoop, 16 mini burgers. Set Aside.
  2. Heat oil in saute pan over medium and cook burgers until crispy on the outside and cooked through. Set Aside.
  3. On a platter, place 16 lettuce leaves. Top each with a slice of tomato and a Chicken Burger. Garnish with some crumbled Cotija Cheese.

Banh Mi Sliders

Serving size 1 Slider (No Bread) 99 cal Protein: 5g Carbs: 3g Fat: 8g

Ingredients

  • 1 Medium Cucumbers , thinly sliced
  • 2 Medium Radishes , thinly sliced
  • 1 Small Carrot , thinly sliced
  • ½ C Rice Vinegar
  • ½ C Water
  • 1 Tbsp Honey
  • 1 Lb Ground Pork
  • ¼ C Dehydrated Onions
  • 3 Tsp Ketchup
  • 1 Tbsp Garlic , minced
  • 1 Tbsp Ginger , minced
  • 1 Tsp Honey
  • 1 Tsp Fish Sauce
  • 1 Tsp Sesame Oil
  • 1 Tsp Tamari (Soy) Sauce
  • Sea Salt & Pepper
  • 1 Tbsp Olive Oil
  • French Roll
  • 2 Tbsp Mayo
  • Cilantro

Directions

  1. Combine Pork, Onion, Ketchup, Garlic, Ginger, Honey, Fish Sauce, Sesame Oil, Tamari, and Seasonings. Set Aside.
  2. In a small pan over medium heat, combine Vinegar, Water, and Honey. Bring to a boil and remove from heat. Pour over the top of the Cucumbers, Radishes, and Carrots. Set Aside.
  3. Heat oil in Saute pan (best if cast iron) over medium. When hot, press pork mixture into the saute pan. Cook first side until crispy. Divide into 8 pieces utilizing a spatula, flip each piece and cook second side. When cooked through, remove from heat.
  4. To assemble, slice open bun, spread small amount of mayo, top with pickled vegetables and a pork slider. Finish with a cilantro garnish.
