Single Serve Dinner – Balls, Patties or Loaves

Ingredients
- ½ lb Ground Chicken Or 2/3 C Lentils, cooked
- 2 C Riced Broccoli
- ¼ C Almond Flour
- ¼ C Dehydrated Onions
- ¼ C Sauce BBQ, Ketchup, Marinara – your choice
- 1 Eggs whisked (Substitute Flax Egg for the Vegan Option)
- Sea Salt & Pepper
Directions
- Mix all ingredients thoroughly.
- Refrigerate for one hour or more. You can also divide the mixture into quarters and freeze 3 of the quarters for use at a later date.
- Preheat oven to 425F. Parchment line baking sheet.
- Form Meatloaf OR Scoop meatballs (with scoop or spoon) onto pan and bake until cooked through, approximately 20 minutes.
- Put in single serving baggies (appx 4-6 meatballs per bag, depends upon size of meatball) and store in freezer until ready to use.
- Thaw in fridge and then warm on stove top or microwave.
