Single Serve Dinner – Balls, Patties or Loaves

Ingredients

  • ½ lb Ground Chicken Or 2/3 C Lentils, cooked
  • 2 C Riced Broccoli
  • ¼ C Almond Flour
  • ¼ C Dehydrated Onions
  • ¼ C Sauce BBQ, Ketchup, Marinara – your choice 
  • 1 Eggs whisked (Substitute Flax Egg for the Vegan Option)
  • Sea Salt & Pepper

Directions

  1. Mix all ingredients thoroughly. 
  2. Refrigerate for one hour or more. You can also divide the mixture into quarters and freeze 3 of the quarters for use at a later date.
  3. Preheat oven to 425F. Parchment line baking sheet.
  4. Form Meatloaf OR Scoop meatballs (with scoop or spoon) onto pan and bake until cooked through, approximately 20 minutes.
  5. Put in single serving baggies (appx 4-6 meatballs per bag, depends upon size of meatball) and store in freezer until ready to use. 
  6. Thaw in fridge and then warm on stove top or microwave.
