Sheet Pan Dinner – Buffalo Chicken

I love sheet pan dinners. The best thing about it is easy clean up, especially when you invest in parchment paper liners. They’re better than aluminum foil because the food never sticks to it and you don’t have to coat the pan with a ton of oil and calories.

Serving size ¼ 280 cal Protein: 25 g Carbs: 5 g Fat: 17 g

Ingredients

  • 1 Med Cauliflower , full head or florets
  • 1 Lb Chicken Tenders (raw and not breaded)
  • ¼ C SMART Buffalo Sauce
  • 2 Tbsp Water
  • Sea Salt & Pepper

Directions

  1. Preheat Oven to 425F. Parchment line sheet pan.
  2. Remove core and divide head of cauliflower into florets.
  3. Place florets and tenders on the baking sheet.
  4. In small bowl, mix buffalo sauce and water. 
  5. Toss chicken and cauliflower with sauce.
  6. Season with Salt & Pepper, and bake for 30 minutes.
  7. Serve Chicken and Cauliflower with Celery Sticks and Bleu Cheese Dressing.
