Sausage Mushroom Spinach Pasta

This is an amazing pasta dish, but like any pasta dish, the calories add up quickly. We’ve managed the calories by reducing the pasta serving size to 2 oz per person and utilizing small amounts of highly flavorful bacon and sausage. The other surprise add to this dish is Maitake mushrooms because they are woody and rich in flavor. If you can’t find them, no worries, substitute any other wild mushroom or more button mushrooms. And if you prefer no alcohol, a mushroom broth works really well with this dish.
Ingredients
- 2 Strips Bacon , chopped
- 12 oz Sweet Italian Sausage
- 1 Med Yellow Onion , chopped
- 4 Cloves Garlic , minced
- 10 oz Button Mushrooms
- 4 oz Maitake Mushrooms , sliced
- ½ C Dry White Wine
- Sea Salt & Pepper (watch the salt! Bacon, Sausage, and Parm all add saltiness to this dish)
- 12 oz Spaghetti , cooked, drained and 1 C of pasta water set aside
- ½ C Parmigiano-Reggiano Cheese , grated
- 3 C Spinach (if using Frozen, thaw, drain, and squeeze excess water out)
Directions
- Sauté bacon in large pan over medium until crispy. Add sausage and sauté until cooked through and lightly crispy. Remove from pan and set aside.
- In same pan, sauté onion over medium until soft. Add garlic and seasonings - cook until fragrant. Add mushrooms and cook until they release some of their liquid. Add wine and cook until it’s reduced by ½, approximately 5 minutes.
- Reduce heat to med-low, add spaghetti and meat to sauté pan and combined well. Add cheese and spinach. Add ½ the pasta water, more as needed. Put lid on and steam spinach for 2-3 minutes. Remove lid, stir well, and continue cooking briefly until pasta is warmed through and cheese has melted.
