Tomato Vinaigrette
This is a great way to use up a batch of tomatoes a little past their prime. Slow roasted tomatoes are just concentrated goodness that we turn into an amazing vinaigrette. This dressing is creamy and sweet without the addition of cream, mayo or sweeteners – just the essence of amazing tomatoes – saving more than 100 calories per serving. The added flavor comes from roasting all the moisture out of the tomatoes and concentrating the sweetness. Then we added a boost of flavor with Balsamic Vinegar and Dijon Mustard.
Oven Dried Tomato Vinaigrette
Ingredients
- 1 C SMART Oven Dried Tomato Paste Substitution: Oil packed Sundried Tomatoes
- 1 Tbsp Dijon Mustard
- ⅓ C Balsamic Vinegar
- ⅓ Olive Oil
- 1 Tsp Harissa
- 2-4 Fresh Mint Leaves
- Sea Salt & Pepper
Directions
- Put tomatoes in the Blender and process until smooth.
- Add all other ingredients.
- Process until well combined.
- Add a bit of water if it’s too thick. Adjust seasoning and serve.
Oven-Dried Tomato Paste
Ingredients
- 2 Lbs Roma or Kumato Tomatoes , cut in half
- 4-5 Cloves Garlic , minced
- Dehydrated Onions
- 2 Tbsp Olive Oil
- 1 Tbsp Oregano
- Sea Salt & Pepper

- 4 Oz Bacon , chopped into 1” pieces
- 1 Tbsp Bacon Fat
- 2 C Zoodles
- ½ C SMART Tomato Vinaigrette
- 2 C Lettuce , chopped
- ¼ C Scallions
- 16 SMART Oven Dried Tomatoes
Mediterranean Lentils
Ingredients
- 1 C Lentils , green or brown
- 3 C Chicken Bone Broth , low sodium (too much salt makes the lentils tough)
- ½ C Cucumbers , diced
- ½ C Bell Peppers , diced
- ½ C Green Onions , sliced
- ¼ C Parsley , minced
- ¼ C Mint , minced
- 6 Oz Feta Cheese , crumbled
- ½ C SMART Tomato Vinaigrette
