Thai Peanut Sauce
This beautiful Thai Peanut Sauce is not only lighter than the store-bought version but is also much more flavorful so it can really make light dishes sing. We have lightened up this sauce in two ways. First, we replaced all of the sugar with 1 tbsp of really good quality honey. And second, we replaced peanut butter with good quality almond butter to lower the fat content. And we’ve amped up the flavor with fresh ginger, tons of fresh lime juice, and spicy Chile-Garlic sauce. This sauce is perfectly balanced in every way and will elevate even the most basic dish.
Below are four dishes suited perfectly for this sauce – Spring Rolls, Street Tacos, Peanut Noodles, and a gorgeous Thai Peanut Salad.
Thai Peanut Sauce
Ingredients
- ¼ C Tamari (Soy) Sauce
- 2 Tbsp Almond Butter
- 1 Tbsp Honey
- 1 Tbsp Rice Vinegar
- 1 Tbsp Sesame Oil
- 1 Tbsp Chile Garlic Sauce
- 1 Clove Garlic , minced
- 1 Tbsp Ginger , grated
- 2 Tbsp Lime Juice
- 2 Tbsp Hot Water
Directions
- Combine all ingredients in a blender or a bowl and mix well. Stores well for up to one month.
Thai Spring Rolls
Ingredients
- 2 Oz Rice Vermicelli
- 8 Rice Wrappers (8.5” in diameter)
- 8 Large Shrimp , cooked, peeled, deveined and cut in half
- 2 Tbsp Basil , leaves removed, stems discarded
- 3 Tbsp Mint , leaves removed, stems discarded
- 3 Tbsp Cilantro , leaves removed, stems discarded
- 1 Carrot , shredded
- 2 Purple Cabbage Leaves , sliced

Thai Peanut Street Tacos
Ingredients
- 1 Tbsp Avocado Oil
- 1-2 Shallots , diced
- 1 Lb Shrimp , shelled and deveined
- ½ C SMART Thai Peanut Sauce
- 8 Jicama Tortillas
- 1 Med Avocado , sliced
- 2 Radishes , sliced
Thai Peanut Noodles
Ingredients
- ½ Lb Rice Noodles
- 1 Tbsp Sesame Oil
- 1 Tbsp Arrowroot , or cornstarch
- 1 Pkg Extra Firm Tofu
- 1 Tbsp Sesame Oil
- 4 Green Onions , sliced
- 1 Tbsp Ginger
- 1 Tbsp Garlic
- 4 C Broccoli Slaw
- ½ C SMART Thai Peanut Sauce
- Cilantro , minced

Thai Peanut Salad
Ingredients
- 1 lb Chicken Thighs , boneless/skinless
- Sea Salt & Pepper
- 2 C Napa Cabbage , shredded
