Ranch Dressing
Whether you follow a Vegan Diet or not, you are going to love this version of Ranch Dressing with two clear benefits. It’s much lower in calories than the traditional Mayo/Buttermilk version AND it’s much higher in protein. The base of this dressing is a Cashew Cream made in your blender from Raw Cashews and Water. Simply by changing the amount of water, you can adjust the thickness of this dressing.
This recipe includes a Ranch Dressing packed with tons of fresh herbs and 3 different dinners that come together in a flash. WOW!
Ranch Dressing
Ingredients
- 1 C Cashews , raw
- ½ C Water
- 1 tbsp Mustard
- 1 tbsp Lemon Juice
- 2 Tbsp Apple Cider Vinegar
- 3 Tbsp Oil
- Sea Salt & Pepper
- ½ C Fresh Parsley, Dill, and Chives
Directions
- Add Cashews and water to blender and process until smooth.
- Add Mustard, Lemon, ACV, Oil, Salt & Pepper and blend until smooth.
- Finally, add fresh herbs and pulse until herbs are the desired texture.
- Store in refrigerator up to two weeks.
Meatloaf Lettuce Wraps
Ingredients
- 1 Lb Ground Chicken (or other preferred ground meat)
- 1 b Broccoli , riced in a food processor
- 3 Large Eggs
- ⅓ C BBQ Sauce
- ⅓ C Oatmeal , Old Fashioned Gluten Free
- ⅓ C Dehydrated Onions
- 1 Tbsp Smoked Paprika
- 1 Tbsp Smoky Turmeric
- Sea Salt & Pepper
- 1 Tbsp Olive Oil
- 2 Med Onion , sliced
- Sea Salt & Pepper
- 8 Large Leaves Iceberg, Romaine, or Leafy Lettuce
- 1 C SMART Ranch Dressing (1 Tbsp per Lettuce Wrap; 2 Wraps per Person)
Chipotle Ranch Tacos
Ingredients
- 1 Tsbp Olive Oil
- 1 Med Onion , diced
- 2 Med Bell Peppers , diced
- 2 Cloves Garlic , minced
- 1 Tbsp Smoked Paprika
