Nacho Cheese

Cheese is quintessential to sporting events and tailgate parties. We have reduced the calories slightly, but really impacted the amount of saturated fat in this dip. We've accomplished this by eliminating the processed cheese and cream and replacing it with Cashew Cream and Spices. This is a much healthier version of the classic, Nacho Cheese Sauce. We've then used it in three beautiful dishes and lightened those up substantially by incorporating more vegetables and tons of spices

Nacho Cheese

Ingredients

  • 2 C Cashews , raw
  • 3 Tbsp Lemon Juice
  • 2 C Water
  • ½ C Nutritional Yeast
  • 1 Tsp Smoky Turmeric
  • 1 Tsp Onion Powder
  • 1 Tsp Chili Powder
  • Sea Salt & Pepper
  • `1 C Water , as needed
  • Sea Salt & Pepper

Directions

  1. Cover the cashews in boiling water and soak for 10 minutes. Drain and set aside.
  2. Place all ingredients except the last cup of water into a high powered blender and process until smooth.
  3. Pour into sauce pan over medium heat. Whisk continuously until its thick, warm and bubbly. Add final cup of water, as needed, to achieve desired sauce thickness.
  4. Adjust seasoning and serve. Store in fridge up to two weeks. To warm, repeat Step 3 and add more water, if needed.

Cauliflower, Chorizo & Cheese

Ingredients

  • 1 Tbsp Olive Oil
  • C4 Cauliflower , florets
  • 1 Smoked Paprika
  • 1 Tbsp Garlic Powder
  • Sea Salt & Pepper
  • 2 Lemon , cut in half
  • 4 Oz Chorizo or Soyrizo
  • ¼ C SMART Nacho Sauce
  • ½ C Water

Black Bean Enchiladas

Ingredients

  • 1 C Onion , diced
  • 1 C Bell Peppers , diced
  • ½ C Poblano , diced
  • 2 Cloves Garlic , minced
  • 1 Tbsp Chili Powder
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp Cumin
  • 30 Oz (2 Cans) Black Beans , drained and rinsed
  • 28 Oz (1 Large Can) Enchilada Sauce
  • 12 Corn Tortillas
  • ½ C SMART Nacho Sauce

Mac & Cheese

Ingredients

  • 1 Tbsp Olive Oil
  • 8 Oz Macaroni
  • 2 C Broccoli , florets
  • 1 C SMART Nacho Sauce
  • 1 C Water
  • ½ C Bread Crumbs
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp Garlic Powder
  • Sea Salt & Pepper
  • 2-3 Tomatoes , sliced
