Samosa Burgers

Ingredients

  • 4-5 Med Potatoes , sliced (skins on or off – your preference – I like them on)
  • 3 C Vegetable Broth
  • 1 C Frozen Green Peas
  • ¼ C Raisins (I USED A MIXTURE OF GOLDEN RAISINS AND DRIED CRANBERRIES) 
  • 1 Tbsp Avocado Oil
  • ½ Med Onion , diced
  • Up to 1 Tbsp Curry plus Coriander Lime, Smoky Turmeric, and/or Cumin
  • Avocado Oil

Directions

  1. Boil potatoes in veggie stock until soft. Drain and mash them. Combine peas and raisins – and set aside.
  2. Heat oil in saute pan over medium heat.
  3. Add onion and cook until soft.
  4. Add spices and cook until fragrant. 
  5. Add lemon juice and set aside to cool. 
  6. Add Onion mixture to potato mixture.  Scoop into balls and press flat with the palm of your hand.
  7. Heat oil in Saute pan and cook each burger until crispy on both sides and warmed through.
  8. NOTE: If you like a crispier “burger”, coat each ball in bread crumbs (I like panko) or almond flour (for a gluten free option).
  9. Serve with Chutney Dressing (any kind of Chutney, Dijon, Rice Vinegar, and EVOO) and arugula.
