Salmon Frittata

Ingredients

  • 1 Tbsp Olive Oil
  • 1 Med Onion , diced
  • 2-3 Cloves Garlic , minced
  • 1 Tbsp Oregano
  • Salt & Pepper

Directions

  1. Preheat Oven to 425F.
  2. Heat EVOO in oven-proof saute pan (preferably cast iron) over medium heat.
  3. Add onions and garlic, saute until soft.
  4. Add spices and saute until fragrant.

Ingredients

  • 2-3 Large Handfuls Spinach (over fill pan, it will cook down quite a bit)
  • 4-6 Ounces Smoked Salmon , broken into small pices
  • 2 Med Tomatoes , thick sliced 

Directions

  1. Add spinach and saute until wilted and soft.
  2. Add smoked salmon
  3. Distribute salmon and veggies evenly around pan. 
  4. Pour beaten eggs over top of salmon and veggies. 
  5. Add sliced tomatoes around the frittata like a pizza.

Ingredients

  • 8-10 Eggs Eggs , beaten
  • Salt & Pepper

Directions

  1. Continue cooking on stove top until lightly browned on the underside of the frittata.
  2. If not fully through at this point (egg is jiggly), then transfer to oven for 10ish minutes or until fully cooked.
  3. This makes 8-12 servings and can be reduced to better fit a smaller pan.
  4. NOTE: You can see how flexible this dish is. The smoked salmon, veggies, and spices can be swapped a million different directions. And the addition of cheese can make this a really rich dish. Have fun and be creative!
