Salmon Fajitas

The big calories in Fajitas are generally the tortillas and all the accompaniments (sour cream, cheese, and guacamole). By taking this Asian spin on Fajitas, we avoid all the extra calories, and replace it with so much more flavor! At 347 calories, these fajitas are less than half the calories of standard fajitas. And look at that protein!

Serving size 1 Fajita 347 cal Protein: 28 g Carbs: 16 g Fat: 20 g

Ingredients

  • 2 Tbsp Teriyaki Marinade
  • 1 Tsp Honey
  • 1 Tsp Black Strap Molasses
  • 1 Tbsp Olive Oil
  • 2 Med Onion , sliced
  • Poblano and/or Bell Peppers , sliced
  • 1 Lb Salmon , cut into 4 pieces
  • 4 Almond Flour Tortilla

Directions

  1. PreHeat oven to 425F. Parchment line a baking sheet
  2. In a small bowl, combine marinade, honey, and molasses. Set Aside.
  3. Heat saute pan over medium. Add tortillas one by one and cook dry in the pan on both sides. No oil is needed (the almonds will release enough oil to keep them from sticking).
  4. When tortillas are done, add oil to the pan and heat over Medium. Add onions and cook until soft. Reduce temperature and simmer until deep golden brown. They can be done anytime, but they continue to get better the longer you give them. When onions are done, add peppers and cook until soft and fragrant. Remove from heat and set aside.
  5. Dry Salmon well, season with Salt & Pepper, and place on baking sheet. Roast in oven for appx 15 minutes. Increase oven to broil, brush salmon with Teriyaki glaze, then move baking sheet to top rack (near heat). Broil for 1-2 minutes, until glaze is caramelized, but watch carefully so the salmon doesn’t over cook. Remove from oven and set aside.
  6. To assemble, place tortilla on plate. Add vegetables, then top with salmon.
