Corned Beef is the center of this dish, so we didn’t eliminate it. This dish has almost exactly the same ingredients as the last dish, but cooked & presented in a completely new way. This is a really fun use of Passover Brisket or St Patrick’s Corned Beef.

Serving size 1 Pizza 287 cal Protein: 15 g Carbs: 21 g Fat: 15 g

Ingredients

  • ½ C Coleslaw
  • 1 Green Onions , sliced
  • 2 Tbsp SMART Thousand Island Dressing
  • 1 Flour Tortilla (or Smart Swap to an Almond Flour Tortilla for a GF option)
  • 1 oz Pastrami or Pastrami Style Smoked Salmon, chopped
  • 1 oz Swiss Cheese , shredded
  • ½ Tsp Caraway Seeds
  • Sea Salt & Pepper

Directions

  1. Preheat oven to 400F. Parchment line a baking sheet.
  2. In a bowl, blend Cole Slaw, Onion, and Dressing. Set aside.
  3. Place tortilla directly on grates in oven and bake 3 minutes. Flip and bake another 1 minute, or until crispy. Remove and set aside.
  4. Place crispy tortilla on baking sheet. Top with Swiss Cheese, Caraway seeds, Salt & Pepper. Bake until cheese is melted, appx 2 minutes. Remove from oven and top with Cole Slaw and Pastram
