Roasted Sweet Potatoes

Ingredients

  • 1-2 Tbsp Coconut Oil
  • Couple Pinches Sea Salt
  • Orange Zest
  • Berries , fresh
  • 1 Lb Sweet Potato

Directions

  1. Preheat oven to 425F
  2. Prep sweet potatoes by poking holes, rubbing with coconut (or other) oil, and sea salt. 
  3. Roast until oozing black – appx 1 hour.  Remove from oven, allow to cool.

  5. Option 1: Prepare breakfast ramekins by mixing Sweet Potatoes, sea salt, and orange zest together. Fill bottom of ramekins and top with mixed berries.
  6. Option 2:  Prepare lunch/dinner ramekins by mixing Sweet Potatoes, sea salt, black beans, and cooked quinoa together.  Fill ramekins with mixture.
