Roasted Potatoes

Traditionally, mashed potatoes are served with a dish like this and average about 250 calories per serving. Our roasted potatoes are about 100 calories depending mostly upon the size of the potato you use and have tons of flavor coming from the garlic and lemon juice. With very little fat compared to the mashed potatoes that normally have most of their calories coming from milk, butter, sour cream, and cheese.

Ingredients

  • 1-2 Small Potatoes per person – recommend small, thin skinned Yukon Golds
  • 1 Tbsp Olive Oil
  • 1 Tbsp Garlic (1-2 small cloves), minced
  • 1 Tsp Oregano
  • Sea Salt & Pepper
  • 1 Tbsp Lemon Juice (approx. ½ Lemon)

Directions

  1. Thin slice potatoes (skins on or off). 
  2. Toss with oil and spices.
  3. Heat cast iron pan over medium heat. 
  4. When hot, add potatoes and cook on both sides until crispy. 
  5. When almost finished, finish with lemon juice and serve.
