A Reuben sandwich ranges between 600 to 1000 calories when ordered in a restaurant. Corned Beef is the center of this sandwich, so we didn’t eliminate it. The good news is that corned beef is rich and flavorful, so a little goes a long way. If you don’t have access to good corned beef – you can smart swap to Pastrami, Ham, Prosciutto, Pepperoni – and for a Vegan option, there’s a really good Vegan Prosciutto on the market.

By eating this as a bowl, you get all the flavors of a great Reuben without the calories of bread and the disproportionately large serving of meat and we still satisfy with an extra flavorful dressing, cheese, and spices.

Ingredients

  • 1 Tbsp Olive Oil
  • 8 oz Corned Beef
  • 1 Tsp Caraway Seeds can substitute Fennel Seeds
  • 3-4 Green Onions sliced
  • 3 C Coleslaw mix
  • 1 C Carrot shredded
  • Salt & Pepper very little salt needed because corned beef is pretty salty
  • 4 oz Cheese ; Swiss Cheese, shaved or sliced
  • ¼ C SMART Thousand Island Dressing
  • 1 Green Onions , sliced

Directions

  1. In a large Sauté pan over medium, heat oil.
  2. Add corned beef and sauté uncovered until lightly crispy.
  3. Add onions and carraway seeds and sauté until lightly fragrant.
  4. Add Coleslaw and Carrots and sauté until softened (appx 5 minutes)
  5. Mix ingredients well.
  6. Top with cheese and move pan to broiler.
  7. Heat until cheese is melted and has light brown spots. Remove from oven.
  8. Top with a few green onions and drizzle with dressing.
