Red Wine Quinoa

Ingredients

  • 1 Tbsp Olive Oil
  • 1 Med Onion , sliced
  • 1 Tbsp Ginger , minced
  • 1 Star Anise
  • Sea Salt & Pepper

Directions

  1. Heat oil in saucepan over medium heat. 
  2. Add onion and saute until soft and golden. Add ginger and spices, and saute until fragrant.
  3. Add quinoa, and saute until toasted.

Ingredients

  • 1 C Quinoa
  • 1 C Red Wine
  • 1 C Water

Directions

  1. Add Wine and Water.  Bring to a boil, reduce to a simmer, and cook for 15 minutes or until most of the liquid is absorbed.
  2. Remove from heat, cover with a lid, and set aside until ready to plate and serve.
