Purple Salad

Ingredients
- Purple Potatoes cut in half or quarters (depending upon size) Purple Cabbage, diced
- Purple Cauliflower , diced
- Purple Onion , diced
- Parsley , minced
- Cilantro , minced
- Peanuts , minced
Directions
- Add potatoes to pot, fill with water, and bring to a boil. Cook until potatoes are fork tender. Drain and toss with small amount of dressing.
- Add cooked potatoes and all other ingredients in bowl and mix together.
- Add more dressing and toss well.
- Season with Salt & Pepper, if needed, and serve.
