Sometimes, you just want something a little sweet. This pumpkin pudding satisfies in a way that defies the calories and fat. And could quite easily be converted to Pumpkin Spice Pudding with the addition of Pumpkin Spice, Chai Spice, or Cinnamon when cooking this pudding. Almond Milk to reduce the calories and Coconut milk to add richness and silkiness. The whole experience is incredible.

Pumpkin Pudding

Serving size ½ C 91 Cal Protein: 1g Carbs: 17g Fat: 3g

Ingredients

  • 1 Can Coconut Milk
  • ½ C Raw Sugar
  • ½ Can Pumpkin Puree
  • Sea Salt
  • 2 C Almond Milk
  • 1/3 C ArrowRoot
  • 1 Tsp Vanilla Extract

Directions

  1. In a saucepan over Medium heat, combine coconut milk, sugar, pumpkin, and sea salt.
  2. In a bowl, combine almond milk and arrowroot. Add to saucepan and bring to a boil, then drop to a simmer, stirring constantly. Once thickened, remove from the stove and add vanilla. To save for another day, cover top of bowl directly on the pudding with plastic wrap. This will stop the pudding from forming a skin.
