Pasta Puttanesca

Most Italian sauces date back to the 1700s. This sauce is relatively new sometime around WWII. There is no clear history for this dish, but it’s theorized that the Italian Courtesans named it this to declare it peasant food. No matter where it comes from, I love the lightness and variety of flavors this dish has to offer.

Pasta Puttanesca

Ingredients

  • 1 Tbsp Olive Oil (or Oil from Tuna Jar)
  • 1 Clove Garlic , minced
  • 2 C Zoodles
  • 2 Tbsp Olive Oil (or Oil from Tuna Jar)
  • 3 + Cloves Garlic , minced
  • 2 C Marinara (I used my homemade Roasted Tomato Marinara)
  • 8 Oz Tuna Packed In Oil (look for Wild or Line Caught, and glass jars are better than cans)
  • ½ C Olives , pitted and sliced
  • Sea Salt & Pepper
  • Sea Salt
  • ½ Lb Linguini
  • 1 Tbsp Olive Oil (or oil from Tuna Jar)
  • Tomatoes , sliced or halved (depends upon size)
  • Fresh Parsley, Oregano, and Basil

Directions

  1. Bring pot of water to boil over high heat and add sea salt.
  2. In saute pan over medium, heat 1 tbsp oil. When hot, add garlic and cook until fragrant and golden. Add zoodles and cook until soft and lightly browned. Set aside.
  3. Add 2 tbsp oil to the saute pan. When hot, add garlic and cook until fragrant and golden. Add marinara, and blend with garlic. Add Olives, Capers, Tuna, and seasonings. Simmer to let the flavors blend well together.
  4. Cook pasta, stirring occasionally, until tender (aka al dente). Drain and toss with 1 tbsp oil and the sauce. Garnish with fresh tomatoes and herbs.

Rum Caramel Plums

Ingredients

  • 4-6 Plums , pitted and quartered
  • 1 Tbsp Butter , unsalted
  • 1 Tbsp Raw Sugar
  • 1 Tbsp Black Strap Molasses
  • 1 Tbsp Chai Spice
  • Sea Salt
  • 2 Tbsp Rum (Or Brandy)
  • ½ Lemon , Zest and Juice

Directions

  1. Heat butter in skillet over medium. Add plums, sugar, molasses, and spices. Cook until sugar is melted. Add Rum, Zest and Juice. Cook until the plums are softened, 6-8 minutes. Do not boil or let the caramel cook too long it will harden.
  2. Serve immediately on its own or paired with ice cream, unsweetened plain yoghurt or with oatmeal.
