Fig Infused Balsamic Vinegar

Ingredients

  • 1 C Dried Figs , Stems Removed and Quartered
  • 1 ½ C Balsamic Vinegar 
  • 2 Sprigs Rosemary (Optional)
  • Sea Salt & Pepper

Directions

  1. Place all ingredients in saucepan over medium heat and simmer for 5 minutes. Remove from heat, allow to cool to room temperature. Store in fridge.
  2. After several days (or more), strain out the figs. What is left behind is gorgeous Fig Infused Balsamic Vinegar. Use the Fig Pickles in salads, on charcuterie platters, as an ice cream topper, and so much more.

Fig Dressing

Ingredients

  • Fig Infused Balsamic Vinegar
  • Olive Oil
  • Dijon Mustard
  • Sea Salt & Pepper

Directions

  1. Place all ingredients in blender, and blend until emulsified. Store in fridge.

Fig Jam

Ingredients

  • 6 Whole (24 Quarter) Figs - Balsamic Infused
  • Dates
  • ¼ C Hazelnuts , toasted
  • 2 Tbs Frangelico (or other alcohol)
  • Sea Salt

Directions

  1. Place all ingredients in food processor and blend until mostly smooth.
  2. NOTE: This can be made with dried figs that have been rehydrated in a simple syrup (1/2 C Raw Sugar, 1 C water). Bring water and sugarto a boiluntil sugar fully melts.Add figs, remove from heat and let stand for 10 minutes. Drain and use rehydrated figs in Fig Jam recipe.
