Asian Lettuce Wraps

Homemade Hoisin Sauce

Ingredients

  • ¼ C Tamari (Soy) Sauce
  • 2 Tbsp Peanut Butter (I used almond butter)
  • 1 Tbsp Honey
  • 1 Tbsp Rice Vinegar
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Asian Chili Garlic Sauce 
  • 2 Tbsp Miso
  • 1 Clove Garlic , minced

Directions

  1. Combine all ingredients in a bowl and mix well.Stores well for up to one month

Lettuce Wraps

Serving size 1 Lettuce Wrap 223 cal Protein: 23 g Carbs: 5 g Fat: 13 g

Ingredients

  • 1 Tbsp Olive Oil
  • 1 Tbsp Sesame Oil
  • 1 Lb Ground Chicken or Turkey
  • ¼ C Dehydrated Onions
  • 3 Cloves Garlic , finely diced
  • 2 Tsp Ginger , freshly grated
  • Hoisin Sauce
  • 2 C Jicama or Water Chestnuts , finely diced
  • 3 Scallions , sliced into rounds
  • Sesame Seeds
  • Butter Lettuce

Directions

  1. Heat Pan on Stove Top on Medium. Add oils, ginger and garlic. Heat until fragrant. Add onions and meat. Cook meat thoroughly (no pink showing). 5-10 minutes.
  2. Add hoisin sauce, tamari, vinegar, and chili garlic sauce. Stir to combine and cook until most of the liquid has been absorbed. Stirring occasionally. Add jicama and scallions. Finish with sesame seeds. Set Aside.

Salad

Ingredients

  • 1 Med Cucumbers , diced or sliced (skin on off)
  • ¼ C Rice Vinegar
  • 1 Tsp Honey
  • 1 Tsp Black Sesame Seeds
  • Salt & Pepper

Directions

  1. Combine in bowl. Mix thoroughly. Set Aside.
  2. ASSEMBLYStart with Butter Lettuce Cup. Scoop in Turkey mixture. Top with Cucumber Salad. Enjoy!
