Purple Cabbage & Bacon Tacos

Is this a taco or a lettuce wrap? Call it whatever you want - these are delicious! We have trimmed the calories from a standard taco by eliminating the tortilla and the cheese. Neither are needed to enjoy this dish. We've added caramelized cabbage in place of meat to give it bulk and a natural sweetness. We've added a small about of Bacon because it is a highly flavorful meat, so it only takes an ounce or so to flavor each taco. And the home made beans are creamy and spicy. What a combination!

Purple Cabbage & Bacon Taco

Serving size 1 Taco 210 Protein: 11g Carbs: 21g Fat: 9g

Ingredients

  • 4 oz Bacon , chopped

Directions

  1. Heat cast iron pan on medium and cook bacon until crispy. Set aside. And remove grease from the pan. Set Aside.

Refried Beans

Serving size ¼ C 69 cal Protein: 4 g Carbs: 12 g Fat: 0 g

Ingredients

  • 1 Tbsp Olive Oil
  • 1 Med Onion
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp Smoky Turmeric
  • √ Cumin
  • 1 Tbsp Ancho Chili Pepper
  • Salt & Pepper
  • 1 Lb Dry Beans (I used Navy Beans, but any would work)
  • 3 C Bone Broth (any kind of broth would be great)
  • 3 C Water
  • 2 Tbsp Bacon Grease
  • ½ Tbsp Smoked Paprika
  • ½ Tbsp Cumin
  • ½ Tbsp Ancho Chili Powder

Directions

  1. I made the beans in my Instapot and they were done in about 40 minutes. If you don’t have a pressure cooker, you can make them stove top, in the oven, or in a slow cooker – but all three of these methods will take a lot more time – so plan appropriately.
  2. In instapot, use saute setting and cook onion and spices until soft and fragrant. Add beans and stir to coat with spices. Add broth and water. Close instapot and cook as directed by manufacturer. When cooked, remove beans, leave liquid.
  3. In saute pan, add grease and spices. Add beans and more spices and saute until fragrant. Use masher to mash the beans

Braised Cabbage

Serving size 8 64 cal Protein: 2 g Carbs: 8 g Fat: 3 g

Ingredients

  • 2 Tbsp Bacon Grease
  • 1 Med Purple Onion , diced
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp Smoky Turmeric
  • 1 Tbsp Cumin
  • 1 Tbsp Ancho Chili Pepper
  • Salt & Pepper
  • 1 Med Head Cabbage , cut into threads
  • ⅓ C Vinegar (I used Sherry, but use any Vinegar you prefer)

Directions

  1. Heat grease in cast iron pan. Add onion and spices and cook until fragrant and soft. Add cabbages and vinegar.
  2. TO SERVE: Start with large leaves of lettuce or your favorite tortilla. Add beans. Then add cabbage. Finish with fresh herbs or your favorite cheese. Enjoy!
