Ingredients
- 1 Almond Flour Tortilla
- 1 Tbsp Spinach , pureed
- 1 Tbsp Pesto
- 4 Sundried Tomatoes (see recipe: SAUCES oven dried tomatoes)
- 2 Tbsp Canned Artichoke Hearts
- 2 Tbsp Olives , Kalmata (or other favorite)
- 1 Oz Parmigiano-Reggiano Cheese , grated
Directions
- PreHeat the oven to 425F. Place Almond Flour tortilla on middle rack in oven. Bake 2 minutes, then flip and cook 2 additional minutes. Remove from oven and set aside.
- Place tortilla on a plate and spread pesto then top with tomatoes, artichoke hearts, olives, and cheese (optional). NOTE: Nutritional Yeast is a great alternative to Cheese.
