Persian Walnut Cookies

Ingredients
- 1 C Walnuts , pieces
- 2 Egg Yolk(s)
- 3 Tbsp Raw Sugar
- 1 Tsp Vanilla Extract
Directions
- PreHeat 300F and parchment line a baking sheet.
- Pulse walnuts in a food processor until coarsely ground.
- Whisk egg yolks, sugar, and vanilla for a few minutes until mixture becomes pale and creamy
- Mix in the ground walnuts until combined well.
- Scoop spoonfuls onto baking sheet.
- Smooth the dough and press a walnut on top of each cookie.
- Bake for 15 minutes or until lightly brown.
- Cool for 10 minutes prior to serving.
