Persian Walnut Cookies

Ingredients

  • 1 C Walnuts , pieces
  • 2 Egg Yolk(s)
  • 3 Tbsp Raw Sugar
  • 1 Tsp Vanilla Extract

Directions

  1. PreHeat 300F and parchment line a baking sheet.
  2. Pulse walnuts in a food processor until coarsely ground.
  3. Whisk egg yolks, sugar, and vanilla for a few minutes until mixture becomes pale and creamy
  4. Mix in the ground walnuts until combined well.
  5. Scoop spoonfuls onto baking sheet.
  6. Smooth the dough and press a walnut on top of each cookie.
  7. Bake for 15 minutes or until lightly brown.
  8. Cool for 10 minutes prior to serving.
