Miso Butter Onions

Ingredients

  • 2 Lb Onion , peeled and cut in half
  • 7 Tbsp Butter , unsalted
  • ⅓ C Miso
  • 1 Qt Water , warmed

Directions

  1. PreHeat oven to 500F (450F, if you have a convection oven).
  2. In a medium bowl, mix together the butter, miso, and water until smooth.
  3. Place the onion halves cut side down and spaced apart in a cast iron pan or other pan that can handle the 500F degree oven. 
  4. Pour butter mixture over the top of the onions and cover with lid or well fitted foil.   
  5. Bake for 35 minutes. 
  6. Remove lid/foil and turn the onions over so they are cut side up.
  7. Try to keep the onions intact – this is tougher with shallots.
  8. Put back in oven uncovered, cook for 45-50 minutes more, basting every 10 minutes.
  9. The onions are done when they are very soft, deep brown, and the sauce has been reduced to gravy.
  10. My favorite ways to serve it are with roast chicken, spread on toasted bread, or in a baked potato.
