Mediterranean Lentils

Ingredients
- 1 C Lentils , green or brown
- 3 C Chicken Bone Broth , low sodium (too much salt makes the lentils tough)
- ½ C Cucumbers , diced
- ½ C Bell Peppers , diced
- ½ C Green Onions , sliced
- ¼ C Parsley , minced
- ¼ C Mint , minced
- 6 Oz Feta Cheese , crumbled
- ½ C SMART Tomato Vinaigrette
Directions
- In a Saucepan, combine lentils and broth and bring to a boil.
- Cover, reduce heat, and simmer, stirring occasionally, for 17-20 minutes, or until tender but not mushy.
- Drain any excess water and toss with 1 Tbsp Vinaigrette.
- Set Aside
- In a Bowl, combine lentils, cucumber, peppers, onions, parsley, mint, and feta.
- Toss with the remainder of the Vinaigrette.
