Mediterranean Lentils

Ingredients

  • 1 C Lentils , green or brown
  • 3 C Chicken Bone Broth , low sodium (too much salt makes the lentils tough)
  • ½ C Cucumbers , diced
  • ½ C Bell Peppers , diced
  • ½ C Green Onions , sliced
  • ¼ C Parsley , minced
  • ¼ C Mint , minced
  • 6 Oz Feta Cheese , crumbled
  • ½ C SMART Tomato Vinaigrette

Directions

  1. In a Saucepan, combine lentils and broth and bring to a boil. 
  2. Cover, reduce heat, and simmer, stirring occasionally, for 17-20 minutes, or until tender but not mushy. 
  3. Drain any excess water and toss with 1 Tbsp Vinaigrette.
  4. Set Aside
  5. In a Bowl, combine lentils, cucumber, peppers, onions, parsley, mint, and feta.
  6. Toss with the remainder of the Vinaigrette.
