Meatloaf Lettuce Wraps

This meatloaf is such a winner! Traditional Meatloaf sandwiches weigh in at a hefty 600-1000 calories while this one is a lean 302 calories. But don’t be food by the lack of calories. You won’t even notice that half the meat is gone by adding riced broccoli in its place. Second, we smart-swapped to oatmeal as a binder in place of breadcrumbs for more nutritional value, protein, and fiber. The flavor booster spices AND caramelized onions make this dish memorable! And don’t forget to take advantage of this dish’s ability to last in the fridge a couple of days – so it can be immediately packaged for lunch or dinner tomorrow.
Ingredients
- 1 Lb Ground Chicken (or other preferred ground meat)
- 1 Lb Broccoli , riced in a food processor
- 3 Lg Eggs , beaten
- ⅓ C BBQ Sauce
- ⅓ C Oatmeal , Old Fashioned Gluten Free
- ⅓ C Dehydrated Onions
- 1 Tbsp Smoked Paprika
- 1 Tbsp
- Sea Salt & Pepper
Directions
- Preheat oven to 350F. Parchment line a baking sheet.
- Mix all ingredients together.
- Add more BBQ sauce if meat mixture is a bit dry.
- Add a bit more oats if mixture is a bit too wet.
- Form mixture into a loaf on baking sheet. Bake for 30-40 minutes.
Ingredients
- 1 Tbsp Olive Oil
- 2 Med Onion , sliced
- Salt & Pepper
- 8 Large leaves Iceberg, Romaine, or Leafy Lettuce
- 1 C SMART Ranch Dressing (1 Tbsp per Lettuce Wrap; 2 Wraps per Person)
Directions
- In sauté pan on Medium, heat olive oil.
- When hot, add onion, salt & pepper.
- Cook onions until soft, then reduce temperature to low and continue caramelizing onions.
- When onions are golden, remove from heat and set aside.
- Once cooled, slice the meatloaf in half long ways first, and then make 7 cuts the other direction, creating 16 pieces of meatloaf.
- TO SERVE: drizzle each lettuce wrap with 1 Tbsp Ranch dressing, then place 1 piece of Meatloaf and 1 Tbsp caramelized onions in lettuce. Roll it up and enjoy!
