Matcha Amaretti Cookies

Ingredients
- 2 ½ C Almond Flour
- ½ C Raw Sugar
- 1 Tsp Matcha Powder (Optional)
- ¼ C Aquafaba (liquid from a can of Chickpeas)
- 1 Squeeze Lemon Juice
- 1 Tsp Almond Extract Confectioner’s Sugar
Directions
- PreHeat Oven to 300F.
- In a large bowl, mix together flour, sugar, and matcha powder.
- In a separate bowl, whip aquafaba and lemon juice until peaks form.
- Add Aquafaba and extract to dry mixture.
- Do not over mix.
- Use a scoop, make 1” balls and roll them in powdered sugar.
- Arrange on parchment lined baking sheet, 1” apart.
- Bake for 30 minutes. Remove from oven and allow to cool.
