Mac & Cheese is so much lighter by replacing half the pasta with broccoli. And then replacing all the cheese and cream with this beautifully flavorful and light Nacho cheese sauce is sheer brilliance. Then we top this dish with crunchy bread crumbs and sliced tomatoes

Serving size 1/6 C 297 cal Protein: 10 g Carbs: 43 g Fat: 10 g

Ingredients

  • 1 Tbsp Olive Oil
  • 8 Oz Macaroni
  • 2 C Broccoli , florets
  • 1 C SMART Nacho Sauce
  • 1 C Water
  • ½ C Bread Crumbs
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp Garlic Powder
  • Sea Salt & Pepper
  • 2-3 Tomatoes , sliced

Directions

  1. PreHeat oven to 375F. Grease bottom and sides of 9x12 casserole dish with oil. Set Aside.
  2. Boil large pot of salted water over high heat.
  3. Add the macaroni and cook according to the directions on the package, appx 6-8 minutes.
  4. In last 2 minutes, add broccoli florets. Drain and Set Aside.
  5. In the Saute pan over medium, add oil. When hot add bread crumbs and seasoning.
  6. Cook, stirring constantly until breadcrumbs are crispy and golden. Remove from pan and set aside.
  7. Add SMART Nacho Sauce to same pan, reduce heat to low. Add water, if needed. Adjust seasoning and set aside.
  8. Mix together pasta, broccoli, and sauce. Pour into casserole dish. Top with toasted breadcrumbs and tomatoes. Bake 30 minutes and serve.
