Lentil Soup

Lentils are an amazing plant-based source of protein. And they’re filled with fiber, so they’ll keep you feeling full longer. But, they don’t have much flavor, so we need to add them in the form of vegetables, spices, and an amazing broth. This soup normally has a ton of sausage or another type of pork. We’ve added only 8 oz for the entire pot of soup. It doesn’t need more meat to be appealing to the palate. It just takes a little bit added at the very beginning of the soup, before the onions, to flavor the entire pot – creating savings of nearly 200 calories per bowl.
Ingredients
- 1 C Lentils
- 3 C Water
Directions
- Rinse lentils.
- Add lentils and water to soup pot.
- Do not add salt, it can make the Lentils tough.
- Bring to a boil, reduce heat to simmer, cover pot, and cook for 20 minutes. Set aside.

- 1 Tbsp Olive Oil
- 8 Oz Chorizo or Soyrizo
- 1-2 C Onion , diced
- 3-4 Cloves Garlic , minced
- 1 Tbsp Smoked Paprika
- 1 Tbsp Cumin
- 2 C Carrot , shredded/diced
- 2 C Celery , diced
- 8 C SMART Chicken Bone Broth
Directions
- Heat oil in soup pot over medium heat.
- dd Chorizo, cook until there are lightly crispy bits.
- Add onions, cook until soft. Add garlic and seasonings, cook until fragrant.
- Add carrots and celery. When veggies are soft, add lentils.
- Coat well with spices, then add broth. Bring to a boil, then reduce to a simmer for 20 minutes.
