Ingredients

  • 2 Tbsp Olive Oil
  • 1 C Carrot , diced
  • 1 C Onion , diced
  • 1 C Celery , diced
  • 1 C Potatoes , sliced

Directions

  1. Heat oil in soup pan over medium heat.
  2. Add onions, carrots, and celery and saute until soft.
  3. Add ginger, garlic, salt & pepper and saute until fragrant.

Ingredients

  • 2 Tbsp Garlic
  • 2 Tbsp Ginger
  • 2 Lemon Zest
  • Salt & Pepper
  • 3 Lb Chicken (preferably bone-in) 

Directions

  1. Add Chicken pieces and coat in spices.
  2. Add broth, bring to a boil, drop to a simmer, and cook for 20 to 30 minutes (until chicken is cooked through).

  • ½ C Tarragon
  • Brown Rice , cooked

  1. Add juice, zest and tarragon.
