Lemon Tarragon Chicken Soup

Ingredients
- 2 Tbsp Olive Oil
- 1 C Carrot , diced
- 1 C Onion , diced
- 1 C Celery , diced
- 1 C Potatoes , sliced
Directions
- Heat oil in soup pan over medium heat.
- Add onions, carrots, and celery and saute until soft.
- Add ginger, garlic, salt & pepper and saute until fragrant.
Ingredients
- 2 Tbsp Garlic
- 2 Tbsp Ginger
- 2 Lemon Zest
- Salt & Pepper
- 3 Lb Chicken (preferably bone-in)
Directions
- Add Chicken pieces and coat in spices.
- Add broth, bring to a boil, drop to a simmer, and cook for 20 to 30 minutes (until chicken is cooked through).

- ½ C Tarragon
- Brown Rice , cooked

- Add juice, zest and tarragon.
- Serve over rice.
