Lamb Meatballs

Ingredients
- 2 Tbsp Avocado Oil
- 1 Lb Ground Lamb
- 1 Lemon , zest
- ¼ C Shallots , minced
- ¼ C Parsley , minced
- 2 Tbsp Mint , minced
- 1 Tbsp Garlic , minced
- 1 Eggs
Directions
- Mix ingredients (except Avocado Oil) together thoroughly.
- Refrigerate for an hour. Scoop into balls.
- Makes approximately 24 1” balls.
- Heat Saute pan on Medium.
- Place balls one at a time in pan. Don’t over crowd.
- Turn a couple of times to brown all sides.
- inish cooking meatballs on stove top, or transfer pan to the oven to cook more thoroughly without burning the outside.
- To serve, assemble a platter of Greens and Any Veggies you like.
- Dress the greens with Hazelnut or other Oil and Sea Salt.
- And add the meat to the platter. Enjoy!
