Lamb Meatballs

Ingredients

  • 2 Tbsp Avocado Oil
  • 1 Lb Ground Lamb
  • 1 Lemon , zest
  • ¼ C Shallots , minced 
  • ¼ C Parsley , minced 
  • 2 Tbsp Mint , minced 
  • 1 Tbsp Garlic , minced 
  • 1 Eggs

Directions

  1. Mix ingredients (except Avocado Oil) together thoroughly.
  2. Refrigerate for an hour. Scoop into balls.
  3. Makes approximately 24 1” balls.
  4. Heat Saute pan on Medium.
  5. Place balls one at a time in pan. Don’t over crowd. 
  6. Turn a couple of times to brown all sides.
  7. inish cooking meatballs on stove top, or transfer pan to the oven to cook more thoroughly without burning the outside.  
  8. To serve, assemble a platter of Greens and Any Veggies you like.
  9. Dress the greens with Hazelnut or other Oil and Sea Salt. 
  10. And add the meat to the platter. Enjoy!
