Lamb & Broccoli Burgers

The biggest calories in this dish are from the Lamb. But fortunately, lamb is big on flavor, so we’ve dropped the lamb content to half and substituted in riced broccoli in its place. Up to a 50% replacement, you hardly even notice it’s there. It just tastes like a super moist burger. Then we boosted the taste with the best Greece has to offer – Garlic, Oregano, Mint, Parsley, and Lemon. Oh my! Burgers this good should be illegal!
We’ve saved another 200 calories by serving this bunless, but you won’t notice because it’s topped with that gorgeous Tzatziki and Preserved Lemon. Note, the arugula is not tossed with Oil (another 100 calories saved) because the fat from the meat is perfect to balance the acid from the Preserving liquid of the lemons.
Ingredients
- 1 Lb Ground Lamb
- 2 C Broccoli
- 1 Lg Eggs , whisked
- 1 Tbsp Garlic , minced
- 1 Tbsp Oregano
- 2 Tbsp Mint , minced
- 1 Bunch Parsley , minced
- 1 Tbsp Lemon Zest
- Salt & Pepper
- ½ C SMART Tzatziki
- Preserved Lemon
Directions
- Add all ingredients in a bowl and mix well.
- Optional, refrigerate 1 hour.
- Heat Grill pan or Sauté Pan over medium heat.
- Form meat mixture into 8 patties and cook on both sides until desired doneness is achieved.
- TO ASSEMBLE: Top with Burger and finish with SMART Tzatziki and Preserved Lemon.
