Kabob Koobideh (Minced Meat Kebab)

Ingredients
- 1 Large Onion
- 1 Lb Ground Lamb
- 1 Pinch Baking Soda
- 1 Tbsp Harissa
- 1 Tbsp
- Sea Salt & Pepper
Directions
- Heat grill or grill pan (over med heat).
- Grate the Onion.
- Set Juice aside.
- Combine EVOO, Lemon Juice, Onion Juice, Sea Salt & Pepper.
- Set Aside.

- 1 Tsp Lemon Juice
- 1 Tsp Onion Juice
- Sea Salt & Pepper
Directions
- Combine Lamb, Onion, Baking Soda, Harissa, Turmeric, Sea Salt & Pepper.
- Form into 4 Kabobs – wrap around 1” wide metal skewers (OPTIONAL).
- Grill kabobs 4-5 minutes on each side.
- Baste the kabobs with the EVOO as the kabobs are coming off the grill.
- Garnish with Sumac and Lemon Wedges.
