Ingredients

  • 1 Large Onion
  • 1 Lb Ground Lamb
  • 1 Pinch Baking Soda
  • 1 Tbsp Harissa 
  • 1 Tbsp
  • Sea Salt & Pepper

Directions

  1. Heat grill or grill pan (over med heat).
  2. Grate the Onion. 
  3. Set Juice aside.
  4. Combine EVOO, Lemon Juice, Onion Juice, Sea Salt & Pepper.
  5. Set Aside.

Ingredients

  • 2 Tbsp Olive Oil
  • 1 Tsp Lemon Juice
  • 1 Tsp Onion Juice
  • Sea Salt & Pepper

Directions

  1. Combine Lamb, Onion, Baking Soda, Harissa, Turmeric, Sea Salt & Pepper.
  2. Form into 4 Kabobs – wrap around 1” wide metal skewers (OPTIONAL). 
  3. Grill kabobs 4-5 minutes on each side. 
  4. Baste the kabobs with the EVOO as the kabobs are coming off the grill. 
  5. Garnish with Sumac and Lemon Wedges.
