Huevos Rancheros

Ingredients

  • 4 Almond Flour Tortilla
  • LG Eggs
  • Sea Salt & Pepper
  • 1 Tbsp Olive Oil
  • 1 Medium Onion , diced
  • 6 Baby Bell Peppers , sliced
  • 1 Clove Garlic , minced
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp Cumin
  • 1 Tbsp Oregano
  • 1 Can Black Beans , drained & rinsed
  • ¼ C SMART Enchilada Sauce
  • 2 oz Cotija Cheese OR Sliced Avocado
  • Cilantro

Directions

  1. PreHeat Oven to 425F. Place Tortillas directly on rack and cook for two minutes, flip over, and cook for two more minutes. Remove from oven and set aside.
  2. Crack eggs into bowl and whisk until smooth. Add salt & pepper. Heat saute pan over medium. When oil is hot, add eggs and cook to desired doneness.
  3. In saute pan over medium, heat oil. Add onion and peppers – cook until softened. Add spices – cook until fragrant. Add black beans and warm through. Cook until egg is cooked through. Remove from pan and set aside.
  4. To Assemble: Place tortilla on plate. Spread mashed beans on tortilla. Add veggies and eggs and drizzle with sauce. Top with Cotija Cheese (or Avocado) and Fresh Cilantro.
