Huevos Rancheros

Ingredients
- 4 Almond Flour Tortilla
- LG Eggs
- Sea Salt & Pepper
- 1 Tbsp Olive Oil
- 1 Medium Onion , diced
- 6 Baby Bell Peppers , sliced
- 1 Clove Garlic , minced
- 1 Tbsp Smoked Paprika
- 1 Tbsp Cumin
- 1 Tbsp Oregano
- 1 Can Black Beans , drained & rinsed
- ¼ C SMART Enchilada Sauce
- 2 oz Cotija Cheese OR Sliced Avocado
- Cilantro
Directions
- PreHeat Oven to 425F. Place Tortillas directly on rack and cook for two minutes, flip over, and cook for two more minutes. Remove from oven and set aside.
- Crack eggs into bowl and whisk until smooth. Add salt & pepper. Heat saute pan over medium. When oil is hot, add eggs and cook to desired doneness.
- In saute pan over medium, heat oil. Add onion and peppers – cook until softened. Add spices – cook until fragrant. Add black beans and warm through. Cook until egg is cooked through. Remove from pan and set aside.
- To Assemble: Place tortilla on plate. Spread mashed beans on tortilla. Add veggies and eggs and drizzle with sauce. Top with Cotija Cheese (or Avocado) and Fresh Cilantro.
