Haluski (Fried Cabbage)

This is a beautiful Eastern European dish, but it's heavy in both calories and fat. We have trimmed a full stick of butter, a pound of sausage, and replaced most of the noodles with more cabbage and other veggies. But never fear, the flavor profile has been amped up with sweet carrots, caramelized onions, tons of garlic, and plenty of spices!

Haluski (Fried Cabbage)

Serving size 1 Cup 250 Protein: 7g Carbs: 37g Fat: 9g

Ingredients

  • 2 oz Bacon chopped
  • 2 Tbsp Bacon Grease
  • 2 C Onion diced
  • 6 Cloves Garlic minced
  • 1 Tbsp Fennel Seeds or Caraway Seeds
  • Salt & Pepper
  • 12 C Cabbage (1 Lg Head) shredded
  • 2 C Heirloom Carrots diced or shredded
  • 1 lb Pasta (butter noodles are best)

Directions

  1. Heat Large Saute Pan over medium. Add bacon and cook until crispy. Remove bacon to paper towel lined plate. Set Aside.
  2. Remove all except 2 Tbsp of Bacon Grease. Return to medium heat. When hot, add onions and garlic. Saute until soft and caramelized. Add Spices and cook until fragrant. Finally, add carrots and cabbage. Put lid on pan, steam veggies until soft.
  3. In a separate pot over high heat, fill with water, add a lid, and bring to a boil. When boiling, add salt and noodles. Cook as directed on package. Strain water from noodles and set aside.
  4. Add cooked noodles to the cabbage mixture. Stir to coat with flavors. Adjust seasoning, as needed. Remove from heat and serve hot.
