Grilled Lamb Chops

Ingredients
- 8 Oz Lamb Chops (appx 2 chops/person)
- 1 Tbsp Olive Oil
- 1 Tbsp Garlic , minced
- 1 Tsp Oregano
- Sea Salt & Pepper
- ½ Lemon , juiced
- ¼ C Pomegranate Juice , unsweetened
Directions
- Combine Oil and Spices. Rub Lamb Chops and set aside for 30 minutes (or longer, up to 1 day).
- Heat grill (outdoor or indoor). When hot, grill lamb chops on both sides. If thick, finish in 425F oven to desired doneness.
- Finish with a squeeze of lemon juice. Allow meat to rest a minimum of 15 minutes prior to serving.
- In a saucepan over medium, heat pomegranate juice and reduce by half or more until thick and syrupy. Set aside. When ready to serve lamb chops, drizzle with glaze.
